Honestly Though
Woke up at 9:30am, which is honestly impressive considering I didn’t go to sleep until 1:11am after watching Married at First Sight Australia and promising myself “just one more episode.” (Spoiler: it was never just one more.)
By lunchtime — or breakfast… or brunch? Who even knows anymore, I finally made it to the kitchen at 12:45. In my head, one voice was whispering “bread toast…” but the other, louder, more sensible voice shouted “BUCKWHEAT!” And buckwheat won. Obviously.
So I made my famous buckwheat pudding:
- 2 tbsp buckwheat flour
- 1 tbsp golden linseeds
- ½ cup unsweetened soya milk
- 50g of apple purée
- 5oz of blueberries that have basically been defrosting since last century in the fridge
- A tablespoon of sliced tigernuts (which are not nuts, thank you very much)
Microwaved it for 5½ minutes, until it was piping hot and pretending to be dessert.
And THEN…
OMG. My entire blog went haywire and deleted itself like it was auditioning for a disappearing magic act. I spent the whole afternoon putting it all back together, recreating half a website, questioning life choices, and praying to the WiFi gods. Honestly, if you heard screaming no, you didn’t.
By dinner, my brain was having yet another internal debate: “Cheese toastie… go on… “NO. BLOATING. Behave.”
So instead, I made baked potatoes with cottage cheese and salad like the responsible adult I pretend to be.
And yes, I also ate three cinnamon knots this afternoon because apparently self-control packed its bags and left.
For anyone who wants potato perfection without waiting three hours for the oven:
👉 6 minutes in the microwave on each side 👉 Then 10 minutes in the air fryer at 200°C The skin goes unbelievably crispy and then you melt Lurpak over the top and wonder why you ever considered anything else in life.
Finished the day doing admin, rebuilding this entire blog, and reminding myself: Hay ho, that’s life. At least the potatoes were amazing.
